Chocolate Peppermint Matcha Cups {Keto, Gluten Free, Low Carb, Low Cal}

Choc mint is something that gets requested a lot in his house, especially from Tim who isn't a sweets person normally - but has a soft spot for all things peppermint! These little choc mint matcha cups keep mysteriously disappearing from the freezer - so I must be onto a winner!!

To keep these cups low calorie, I'm using 2 products from the awesome Slim Secrets range! Their Dark Chocolate Mint Choc Love Bites and their Mintabolism Boost bar in Cool Mint and it pairs beautifully with Matcha powder. These bites are the perfect afternoon snack and contain healthy fats, antioxidants and have a refreshing minty flavour!

Try them for yourself and tag me in your creations!

2 packets Dark Chocolate Mint Choc Love Bites

Matcha Peppermint Filling

100g coconut cream (discard water you only want the creamy part)

20g maple syrup

1 tsp Matcha powder

1 tbs almond butter (optional)

¼ tsp Peppermint essence or 1-2 drops of Peppermint oil

1 Slim Secrets Cool Mint Choc Protein Bar

Melt 1 packet of Dark Chocolate Mint Love Bites until fully melted - taking care not to burn it. Spoon mixture into the base of 9 small cupcake moulds (I find a silicon mould works really well)  Place in the freezer to set while you make the filling.

Filing:  Combine filling ingredients and mix well to ensure there are no residual lumps. Remove silicon mould from freezer and spoon an equal amount of mixture into each cup. Cut 1 Slim Secrets Cool Mint Choc Protein Bar into 10 equal portions. I mixed up my topping and pushed a portion into half of the middle of the cups. Place back in the freezer to set.

Melt 1 packet of Dark Chocolate Mint Love Bites until fully melted - taking care not to burn it. Spoon mixture over the 9 cups. With the remaining cups that don’t already contain a portion of the bar top the cup with the piece of bar.

Return to the freezer to set for approximately 20 mins.

Macros per cup: Cals: 94, F 8g, C 2g, P 2g

The Slim Secrets range is available online or from a variety of retailers including Coles, Woolworths, Priceline, IGA and Chemist Warehouse
