Gooey Mocha Caramel Bars



I’ve been in search of a high protein, low carb gooey caramel for a while, and not to toot my own horn too loudly - I’ve bloody done it!


These bars are the perfect mix of crispy base, gooey mocha caramel all topped with a crispy dark chocolate and shredded coconut. The secret ingredient? Keto Coffee from Protein Supplies Australia!




RECIPE


BASE:

50g white chocolate (I used NoShu)

1 cup rice crisps

1/4 cup desiccated coconut

1/4 cup rice malt syrup or thick sticky sweetener of choice


GOOEY CARAMEL:

2 serves Keto Coffee from Protein Supplies Australia

2 serves Chocolate WPI - fast release from Protein Supplies Australia

50g light cream cheese

60g nut butter (I used almond butter)

Dash vanilla


TOPPING:

50g chocolate (I used Well Naturally)

20g coconut oil



METHOD:

Melt white chocolate in a heat proof bowl, mix in sticky sweetener. Combine dry ingredients for the base in a large mixing bowl. Once chocolate and sweetener is combined, mix through your dry ingredients and press firmly into a lined tin. Set aside. (This base will be incredibly sticky - to make it easier spray your fingers with olive oil spray). Place in the refrigerator to set while you prepare the caramel.


Grab your bowl and mix all caramel ingredients together. (Now this is your arm workout for the day, because it’s seriously sticky!!) Layer the gooey caramel over your crispy base. Place in the fridge or freezer to set while you make your chocolate - you’re nearly done


Grab a heat proof bowl and melt your chocolate being careful not to burn it. Combine the chocolate with the remaining coconut oil. Remove your tin from the freezer and pour over the chocolate mix! Top with shredded coconut or topping of choice


I sliced mine into 12 bars!
