No Bake Keto Choc Peanut Butter Balls

Each ball contains approx 3g of carbs

5 simple ingredients! It's not hard - but good food doesn't have to be! These balls are small, but they are packed full of protein, are thick and delicious and are ready to eat in no time at all!

Keto, Vegan, Gluten Free,( and with a peanut free option) once you've mastered this recipe get creative and mix up new flavour combinations of your own!

Chocolate and Peanut Butter go together better then any other combination I know - but finding a healthy alternative that is easy to make, tastes great, has a great texture and doesn't kick me out of ketosis was a hard ask! Enter my Keto Chocolate Peanut Butter Balls

Makes 12 balls.

You'll need

1/2 cup of natural unsweetened Peanut Butter

1/4 cup Coconut Flour (optional)

1/2 cup Chocolate Protein Powder

1/4 cup Monk Fruit Sweetener (optional)

2 bars of Low Carb Chocolate for coating

  • Measure out all ingredients (except the chocolate) and combine them in a large mixing bowl. If the mixture is too thick and crumbly add some liquid - like water, slowly until a thick batter that holds it's shape forms.

  • Using your hands, form small balls and place on a plate or tray lined with parchment paper. Freeze balls for 10 mins.

  • While the peanut butter balls are hardening, melt your sugar free chocolate. Make sure you stir the chocolate regularly to avoid it burning. Remove the peanut butter balls from the freezer and using two forks, dip each ball in the melted chocolate until they are completely covered. Repeat with all balls.

  • Refrigerate for 20 minutes, or until the chocolate coating is nice and firm.

If you prefer not to use the Monk Fruit sweetener (and I actually don't use it anymore) I just add a little extra peanut butter to keep the liquid content up! Just go slow on the liquid because it's easier to add then it is to take it away!

Happy non baking!
