No Bake Salted Caramel Chocolate Raspberry Bites {Vegan Option}

Sweet tooth sorted! About 8 months ago, I stumbled across the gorgeous Stephanie McDonald at Better Being Steph and I’d be lying if I said I hadn’t been dying to make every single one of her amazing looking recipes. This one however is the very first recipe that I tried... because welp, LOOK AT THESE GUYS!!!

Because I can't ever follow a recipe (A habit I inherited from my mother) I tweeked hers slightly, so here’s my take on her No Bake Salted Caramel Raspberry Bites - if you want the original recipe head to her page, but if you want to try mine you’ll need!

No Bake Salted Caramel Chocolate Raspberry Bites


Base: 50g Chocolate Caramel Macro Mike Vegan Protein

50g Chocolate At Health WPI

30g Almond Butter

1 tbs Rice Malt Syrup (or preferred sticky sweetener)

20ml Water (you may need more or less depending on the protein powder used

Filling: 50g Almond Butter

1 scoop Chocolate or Salted Caramel Switch Nutrition Adrenal Switch

10 Frozen Raspberries

Coating: 40g melted Vegan dark chocolate, or

40g cacao butter plus 1 tbs raw cacao powder


10g Vegan White Chocolate

10g Coconut Oil


1. Mix base ingredients in a small bowl to combine. Mould into a dough, portion into 10 even sized pieces, roll and flatten slightly. Set aside

2. Mix both filling ingredients in your bowl and mix gently until fully combined. Place even amounts on top of each base, then top with a frozen raspberry. Place in freezer while you prepare the coating.

3. Dip each frozen bite into the melted chocolate, then place back in freezer to set. If adding the additional white chocolate topping, melt the white chocolate and coconut oil together and mix until a smooth runny consistency. Drizzle over the top of the bites. Replace in the freezer to harden before serving

I find these best from the fridge! Enjoy!!

To make Vegan substitute the WPI for more Vegan protein and add more sticky sweetener.
