You’re all I avo wanted! Is exactly what I said when I took a chomp into this super creamy Vegan Avocado fudge!!



Now I know what you’re thinking, avocado fudge? But I promise, this clean Vegan treat is mindblowingly good! Nutrient dense and rich in good healthy fats, Aussie Avocados contain a bunch of mood-boosting health benefits and help to reduce the risk of developing Type 2 diabetes, help maintain good heart health, boost your energy levels and fight fatigue!

Vegan Vanilla Avocado Protein Fudge


Ingredients


2 large avocados, cubed

1 scoop Vanilla vegan pea protein (I used Macro Mike Salted Hawaiian Vanilla )

1 ripe banana

1 tablespoon rice malt syrup or sweetener of choice

1/4 cup coconut oil, melted

1 squeeze fresh lemon juice

1 pinch salt

2 tablespoons walnuts chopped

2 tablespoons coconut flakes



Preparation

In a blender of food processor, combine avocado, banana, honey, coconut oil, lemon juice, and salt.Blend until smooth, scraping down sides as necessary.Pour mixture into a parchment lined 8x8 inch (20x20 cm) freezer-safe dish and top with chopped walnuts and coconut flakes, or your favourite toppings!Freeze for at least 3 hours. Remove from freezer and cut into squares.
